My gift to you today is this drop-dead gorgeous salad recipe!
Inspired by a summer salad I fell in love with at the Halyard Restaurant in Greenport, NY, this simple salad combines the sweetness of your root vegetable of choice with the richness of manchego cheese and the bright acidity of red wine vinegar. Chopped herbs add depth of flavor and thin shavings of radish and carrot add crunch.
It’s easy enough to throw together during the week, but pretty enough on a plate that you could serve at a dinner party.

Serves 1
⭐️ 1 large handful red leaf lettuce
⭐️ 1/2 c. roasted root vegetables (parsnip, carrot, yam)
⭐️ 1/4 c. thinly sliced radish
⭐️ 1/4 c. shaved carrots
⭐️ 1/4 c. diced manchego cheese
⭐️ 1 tbsp each finely chopped parsley + chives
Dressing:
– Quality olive oil (I like Wild Groves)
– Red wine vinegar
– Sea salt
Add ingredients to your bowl in the order listed above, and dress to taste. Easy!
